FLUFFY BANANA BREAD

(recipe from the collection of Terry Allen)

 

1 c. mashed bananas                       ½ c. shortening

(3 small or 2 large)               1 ½ c. sugar

2 c. flour                                  2 eggs

½ t. baking powder                        1 t. vanilla

¾ t. baking soda                 ¼ c. buttermilk

½ c. nuts                           (or add 1 t. vinegar

½ t. salt                                  to regular milk)

 

Directions:

Put shortening, sugar, eggs and vanilla in large

bowl and cream together at high speed.

Add buttermilk and mix together.

Alternate dry ingredients with mashed bananas,

mixing well between additions.

Stir in nuts.

Grease and flour four mini aluminum pans and

divide batter between pans.

Bake at 350 F for 45 minutes,

or until toothpick comes out clean.
